Shrimp and Crab Mixed Garden Main Dish Salad

Enough of all that diet stuff. How about some food?!

Okay, well yes, it IS a salad, but it sure was a good salad for somebody who hasn't eaten a salad in awhile. I love doing different kinds of salads for lunch, so I'll be posting some of them to share with ya'll.

Nice and light (especially coming off all the holiday goodies), fresh and just delicious.

Shrimp and Crab Mixed Garden
Main Dish Salad

1 teaspoon of unsalted butter
3 ounces of shrimp, peeled and deveined
Old Bay Seasoning, to taste
Slap Ya Mama Cajun Seasoning,to taste
1 ounce of lump crab meat
About 3 cups of assorted mixed lettuces (romaine, red & green leaf, mixed baby greens)
3 inch strip of celery, chopped
1/4 of a cucumber, chopped
1 large radish, sliced
1/4 of a tomato, chopped
1/4 of a green onion, sliced
1 tablespoon of Sunkist Almond Accents
2 tablespoons of Kraft olive oil raspberry vinaigrette, or your choice of dressing


In a skillet over medium heat melt the butter. Add the shrimp, sprinkle with Old Bay and Cajun seasonings and cook just until shrimp turns an opaque pink color. Don't overcook! Remove from the hot pan and set aside.

Wash and spin dry the lettuces. I used green leaf, red leaf and a spring mix of romaine, tango and radicchio in the photo above. Spread the lettuces on a dinner plate and scatter the celery, cucumber, radish and tomato on top. Sprinkle shrimp all around on top and pile the crab into the very center of the salad. Scatter with green onion and almonds, and drizzle all over with the vinaigrette.

Serve with a slice of whole grain bread drizzled with some flaxseed oil or a few multi-grain crackers.

5 Weight Watchers Points for the salad
Add 2 points for the Kraft olive oil vinaigrette
Add another 2 points for 5 Premium brand saltine crackers w/multigrain

I love salads too. We had a yummy spinach salad tonight. This one looks really good.

Oh how do you do your's? Do you use a hot dressing?

Sometimes. Last night I did. Fried bacon, oil, sugar and vinegar heated and pour over the spinach,onions, mushrooms, hard boiled eggs. Oh, and croutons. Is that how you make yours? Sometimes I use Raspberry dressin' and nuts.

That sounds so good Rebel. Yeah, hot bacon dressing for spinach salad. Hubs won't eat a spinach salad though but sssshh... I do sneak some baby spinach in on his side salads. :) It took me awhile to work him out of iceberg lettuce but now that I used mixed greens I can sneak it in LOL!
